Provencal Olive Spread
Yields 2 cups
Ingredients:
- 2 (15-ounce) cans Great Northern beans or other white beans, rinsed and drained
- 1 teaspoon fennel seeds
- 4 teaspoons capers
- 4 teaspoons red wine vinegar
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 16 kalamata olives, pitted
Preparation: Place all ingredients in a food processor; process until smooth. Place bean mixture in a bowl.
